Chile Con Carne

2 pounds meat - chopped fine
2 cloves garlic - minced
4 tablespoons flour
1 tablespoon salt
1 large onion - chopped
4 tablespoons chile powder or chile paste
4 tablespoons fat or oil
1 quart water
Use cheaper cuts of meat (chuck roast cut in small pieces or chile meat). Mix meat with chile powder or paste, garlic and flour. Melt fat in deep pot. Fry onion until tender and add meat mixture. Cook 15 minutes. Add salt. Gradually add hot water. Simmer 1 hour.
